3 Idaho (Russet) potatoes
2 sweet potatoes
2 tbsp olive oil
2 tbsp herbs de provence, optional
salt to taste
1 tsp onion powder
1 tsp garlic powder
⅛ tsp cayenne pepper
¼ cup parmesan cheese, grated
baking sheets
foil
peeler
cutting board
sharp knife
big ziplock bag
measuring cups & spoons
PREHEAT oven to 425F and line two baking sheets with foil
WASH potatoes and peel them if you'd like
CUT potatoes in half lengthwise and then in half lengthwise again. Cut into strips, as thin as possible. It's ok if some are a little thicker.
PLACE cut up fries in a big ziplock bag and add olive oil
SHAKE to coat
ARRANGE fries in a single layer making sure not to overlap too much
BAKE for 30-45 minutes
SPRINKLE grated parmesan cheese and enjoy
