CHINESE CHICKEN[LESS] SALAD

INGREDIENTS

Dressing:

⅓ cup rice vinegar

¼ cup tamari or soy sauce or coconut aminos

3½ tbsp honey  

¼ cup sesame oil

⅓ cup vegetable oil

4 cloves garlic

1 tsp fresh ginger

Salad:

4 cups chopped cabbage

4 cups chopped romaine

1 bell pepper, sliced

2 green onions, sliced

½ cup carrots, grated (about 2 carrots)

½ cup snap peas, sliced

¼ cup cilantro, chopped

⅓ cup cashews

1 cup mandarin oranges

2 cups cooked chicken, shredded

Food processor or blender

METHOD

Dressing: In a food processor or blender, combine all the ingredients and blend until smooth

Salad: Combine all the ingredients in a large bowl.

Add dressing and toss to combine
