CHICKEN STREET TACOS

INGREDIENTS

4 tbsp olive oil

2 tbsp lime juice

1 lime, zested

2 chipotles in adobo sauce (comes in a can), chopped, don't be afraid of the sauce

2 tsp ground cumin

1 tsp smoked paprika

salt & pepper to taste

1 ½ pounds boneless, skinless chicken breasts or thighs, cut into slices or chopped up to preference

tortilla of choice, flour or corn

diced onion, to taste

cilantro, to taste

lime juice, to taste

EQUIPMENT

Mixing bowls

Measuring cups and spoons

Whisk and spatula

Tongs

Baking sheet

Parchment paper

Chopping board

Sharp knife

METHOD

PREHEAT your oven to 425°F
STIR
together the olive oil, lime juice and zest, chipotles, cumin, smoked paprika, and salt & pepper in medium bowl
TOSS
chicken in marinade evenly
REMOVE
chicken from marinade and place on sheet pan with parchment paper. You don't want it swimming in the marinade, so discard remaining marinade
ROAST
chicken in oven until cooked through and soft, about 15-20 minutes
REMOVE
chicken from oven and set aside
WARM
up your tortillas however you please - broil in oven or over stove top
LAYER
your tacos on tortilla with chicken, cilantro, diced onion, and lime juice
